My Banana and Strawberry Muffins Recipe that ticks the ‘treat’ box without the guilt:)  

 

These Muffins are wheat free, refined sugar free and dairy free! They are also high in protein and good fats with almonds and extra virgin olive oil making up the bulk of the recipe.

The perfect treat to put in your jersey for a long ride that isn’t processed and won’t break the bank but most importantly tastes great!!!

 

Ingredients

  • 2-3 very ripe mashed Bananas (I used 1 cavendish and 2 sugar bananas)
  • 1 cup Almond Meal *
  • 1 tbs Honey
  • 2 tbs Coconut Flour
  • 1 tbs ground cinnamon
  • 1/2 cup Extra Virgin Olive Oil
  • 2 Eggs beaten
  • 3 Strawberries
  • 1tsp Baking powder

 

Method 

Place Almonds in a processor (I use the Vitamix) and blend until almonds resemble a a chopped to flour like texture depending on your preference.

Place all ingredients (mashed Bananas, Almond meal, Eggs, Honey, Cinnamon, Extra Virgin Olive Oil, Coconut Flour and Baking Powder ) into a mixing bowl and stir together until blended well.

Pour into a greased muffin tin placing thin slices of strawberry on top of each and bake in the oven at 180 degrees until tops are browned (20-30min).

 

Notes

*If you prefer use a cake tin or a bread tin.

*I use olive oil to grease the oven tins.
