Once Saucepan Frittata – Smoked Salmon and Greens
This has minimal washing up (one saucepan to be exact:), working perfectly for breakfast, brunch, lunch and/or a pre post workout snack! It is quick and easy whilst also looking pretty damn impressive in the middle of the dining table.
Ingredients
*10 Eggs (preferably Organic, Free Range
*400g Smoked Salmon
*Bunch of Dill chopped finely
*Bunch of Flat Leaf Parsley chopped finely
*2 Tablespoons Capers
*1 cup frozen Peas
*1 handful of Rocket
*1 thinly slice small Onion
*Himalayan Salt and Pepper to season
*Thinly sliced lemon
Method
Preheat oven to 180 degrees. Whisk the Eggs, Salt and Pepper together in a bowl. Set aside.
In a large saucepan place 1 Tbs Coconut Oil and the thinly sliced Onion, cook until softened.
Add all other ingredients to the saucepan (Eggs, Salmon, Dill, Parsley, Peas, Capers, Rocket). Place thinly sliced lemon on the top (refer to image) and cook on medium heat until you see the sides start to become firm and centre start to cook.
Place saucepan in the oven (oven lid may not totally shut with saucepan handle). Cook until frittata is cooked through.
For the more adventurous add thinly sliced chilli. Cool and serve.
