My Oat Super Cookie Recipe that will have you reaching for more:)

Its perfect for those wanting an Anzac Cookie without the butter and refined sugar! Dip it in your tea or take a couple on your long ride. It ticks all the foodie boxes!

Ingredients

1 cup Almond Meal

2 cups Oats

¼ cup shredded coconut

¼ cup pepitas

¼ cup Chia Seeds

*1 cup Dried Fruit

1 ripe Banana mashed

½ cup Extra Virgin Olive Oil

½ cup Maple Syrup

1Tbs Cinnamon ground

1 Tsp Baking Powder

*Optional: Orange zest for a festive twist

 

*Note – I use Activated Nuts (soak raw almonds for 8-12 hrs then dry so they are in the ‘growing’ phase:) I used organic dried apricots, prunes and sultanas finely sliced although would usually add figs and medjool dates tooJ

 

Method

Combine all ingrediants in a bowl and mix until well combined. Roll into balls and place on trays (with baking paper) slightly pushing down on them to resemble a cookie like shape. Cook until golden brown on 180 degrees!
